➀ 1 large egg
➀ A pinch of salt
➀ 1 ¼ cups all-purpose flour, sifted (5.3 oz / 150 g)

For the Mascarpone Cream:

➀ Scant 1 cup cold heavy whipping cream (6.8 fl oz / 200 ml, at least 33% fat)
➀ 1/4 cup sweetened condensed milk (2.8 oz / 80 g)
➀ 7 oz mascarpone cheese, cold (200 g)

Optional:

➀ 2–3 tbsp warm milk (for soaking)
➀ Toasted walnuts or graham crackers (if extra crumbs are needed)

1. Prepare the Honey Base

In a saucepan, combine the honey, sugar, and butter.
Place over low heat and gently melt until smooth, stirring constantly.

Do not let the mixture boil, or the honey may lose its delicate floral notes.

2. Activate the Sponge Texture

3. Make the Batter

4. Bake the Sponge

➀  Trim the edges (save the scraps for decoration).

➀  Roll the cake loosely together with the towel.

6. Prepare the Mascarpone Cream

➀ Whip the cold cream with condensed milk on medium speed until soft peaks form (it should resemble thick yogurt).

➀ Add the mascarpone cheese and switch to low speed. Mix just until combined.

7. Assemble the Roll  

➀ Carefully unroll the cooled sponge. It should be flexible and crack-free.

➀ Spread two-thirds of the cream evenly over the cake. 

➀ Roll it up tightly (without the towel), keeping the layers snug.

➀ Wrap the roll in parchment paper and refrigerate for at least 2 hours to set and absorb flavors.

8. Decorate  

➀ Trim the ends with a sharp knife to reveal a clean spiral.

➀ Cover the outside of the roll with the remaining cream.

➀ Crush the reserved cake scraps into fine crumbs (add walnuts or graham crackers if needed).

➀ Press the crumbs gently onto the top and sides using a spatula.
